Healthy Pfizer Recipes

Pamlico Granola

Ingredients
4 cups oatmeal (not instant but old-fashioned Quaker whole grain)

1 cup shredded coconut

1/4 cup toasted wheat germ

1/4 cup sunflower seeds (unsalted if available)

1 tablespoon toasted sesame seeds
(Note: Toasted sesame seeds can be found in the oriental section of the grocery store and are usually much less expensive than plain ones in the spices section. If unavailable toasted, you will need to toast the seeds prior to use.)

1 cup slivered almonds

1 tsp ground cinnamon

1/4 teaspoon nutmeg

1/2 cup honey

1 stick melted unsalted butter

1/2 cup golden raisins

Yields
12 Servings

Instructions
Preheat oven to 325 degrees. Toast coconut on a foil-lined baking sheet. Remove foil and coconut and let cool. Place oats, wheat germ, sunflower and sesame seeds, almonds, cinnamon, and nutmeg in large bowl and toss together. In separate bowl, add melted butter to honey and mix. Pour over dry mixture and toss well. Spread over two foil-lined baking sheets and bake at 325 degrees until golden, about 30 minutes. Cool and break up any clumps. Add raisins last, toss and store in airtight container.
