Healthy Pfizer Recipes

Mango Salsa

This salsa is light and refreshing served with baked tortilla chips. It is also delicious and colorful served over grilled fish or chicken.

Ingredients
1 ripe mango, diced

1 medium tomato, seeds removed and finely chopped

2 tablespoons red onion, finely chopped

3 tablespoons cilantro, finely chopped

1 small jalapeno pepper, seeds removed and finely minced

Juice of one lime

1/8 teaspoon sugar

Pinch of salt to taste

Yields
10 Servings

Instructions
Chop all ingredients and mix together. Squeeze the lime juice over top and sprinkle with salt and sugar and toss. Taste the salsa and adjust seasoning, adding a little more salt or sugar depending on the ripeness of the mango or the flavor of the tomatoes.
