Ingredients
1 cup dried lentils
4 cups water
2 summer squash (or zucchini), finely chopped
2 stalks celery, chopped
2 carrots, chopped
1 small onion, chopped
1 teaspoon salt

Instructions
In a large pot, add lentils to the water. Cover and gently simmer for an hour. Add remaining ingredients. Simmer uncovered until the lentils are soft. The soup will be thick, but if needed, add more water. Serves 6.
