This recipe can be made in a crock pot. Put everything but the rice in the crock pot in the morning before going to work. When you get home, there is a delicious, healthy meal waiting for you.
Ingredients
1 medium onion, sliced
1 cup green pepper, sliced
2 cups celery, chopped
2 cups carrots, chopped
1 teaspoon basil
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon cracked peppercorns
1/2 teaspoon paprika
1/2 cup lemon juice
1/2 cup white wine
1/4 cup olive oil
3 pounds boneless chicken
Water to cover
3 cups Minute Rice

Instructions
Add carrots, celery, onion, and green pepper to crock pot (in that order). Mix seasonings in a big non-metallic bowl with lemon juice, vinegar, and olive oil. Add chicken and pour everything into the crock pot. Add enough water to almost cover the chicken. Slow cook on low for 8 hours.
Add rice and stir. Cook for 5-10 minutes or until the rice has absorbed a lot of the liquid. Turn off heat and serve.
