Healthy Pfizer Recipes

Fiber-friendly Muffins

Ingredients
1 cup whole-wheat flour

2 teaspoons baking powder

1/2 teaspoon salt

1 3/4 cups high fiber cereal such as Kashi or Fiber One

3/4 cup skim milk, rice or soy milk

2 egg whites

1/4 cup honey

1/4 cup unsweetened apple sauce

1 medium ripe banana

Yields
10 Servings

Instructions
Stir together flour, baking powder, and salt; set aside. Combine cereal and milk; leave to stand a few minutes. Add the egg whites and beat well. Stir in apple sauce, banana, and honey. Add flour mixture and mix only until dry ingredients are moistened – do not overmix. Spray muffin pans with oil, then fill. Bake for 20-25 minutes at 400 degrees.
