
Ingredients
1 quart chicken or beef stock
1 medium onion, cut in large slices
2 cloves garlic, minced
1/2 head of cabbage, sliced thin
1 carrot, sliced
1 celery stalk, sliced
1 can tomato paste
1 cup frozen string beans, French cut
1 can stewed tomatoes (with jalapenos optional)
1 teaspoon cayenne pepper (optional)
Salt and pepper to taste

Instructions
Spray large soup pot liberally with cooking spray. Add onion, garlic, celery, and carrot and cook over medium heat. Stir veggies to keep from burning and cook until just soft. Add chicken or beef stock and tomato paste and bring to boil. Add cabbage and string beans, bring to boil again.
Add stewed tomatoes, spices, stir well and enjoy!
